Roasted Apple + Lavender Granola Breakfast Recipe

Does anyone else spend hours upon hours of wasted productive time on Instagram or Pinterest just perusing all the incredible food pictures? I love all the inspiration and creation. But since having such resourceful tools at my fingertips I don't create much on my own - just seemingly replicate these days which is why I don't get to blog much about food even though it's one of my passions.

It's always a disappointment when I am searching and find that one recipe that I just HAVE to try ... like right now ... only to realize ingredients on hand are lacking. So on to the next, I keep browsing ... but I always get excited with the challenge of seeing what I can create when groceries are in dire condition. It amazes me when I can push through another week with seemingly nothing in the house. #NoWaste. And I am apparently not the only one! Enter Rebecca Taylor of Budget Nutrition Guide whom I stumbled upon on Instagram. Browsing through her vibrant and energizing account, I came across this image of hers:

When I first started learning how to eat healthy and cook with real foods, my grocery lists were $tupidly-astounding. I am beginning to learn that with a few staple ingredients, you can usually whip up a myriad of amazing, healthy meals and treats! Including this Roasted Apple + Granola Oats! 

Rebecca seems to do a great job creating eye-popping dishes which she claims are budget friendly. So I couldn't resist following her, and I think you might want to too😊

After a few days away from home (it's good to be back!) and an empty fridge, I put her recipe to the test with my own spin and ... YUM!

ROASTED APPLE + LAVENDER GRANOLA
Ingredients:
– 1 Granny Smith Apple
– Coconut Oil
– 1/4 c. Rolled Oats
– 1/8 c. Shredded Coconut, Unsweetened
– 1 tsp. Home-made Pumpkin Spice Mix
– Handful Sunflower Seeds
– 1 tsp. Ground Flax Seed
– 1 tsp. Chia Seeds
– A Pinch Of Culinary Lavender Buds
– 2 tbl. Raw Honey
*All measurements are approximate since I usually just add a little of this and that.
Instructions:
1. Preheat oven to 350° F.
2. 
Slice top of apple off. Core and scoop out some of the flesh.
3. Rub apple with coconut oil. (I rubbed both the interior and exterior.)
4. Place on baking sheet with parchment paper.
5. Bake for approximately 10 minutes.
6.Meanwhile, mix the remaining granola ingredients with a bit of melted coconut oil and the honey.
7. Add to tray and bake an additional 10-15 minutes until granola is golden and apple is cooked to the consistency of your preference.
8. To serve, scoop lavender granola into apple and drizzle with a bit of coconut milk.
