Lemon Lavender Blueberry Pancakes

I have a food addiction.... in fact, most people that know me could tell you that! 

Since starting my journey to cut down on sugar, I simply ASSuMEd it would mean getting my eating under control. It seemed natural to think that since I was such a picky eater and when I first started changing my diet to eat more naturally it was not a joy... in fact I kind of dreaded it actually. I would get so discouraged when I read other people on the same journey experiencing immediate results and loving the new foods, unable to return to their old habits.

One thing I did resolve to do at the onset was to try and be more open with my palate. I would step outside my box as much as possible for the sake of getting better, even if it meant completely questioning what I was about to put in my mouth (within reason, I have certain limits!)... Let me tell you, my arrival was not immediate and I am still not at the finish but I awoke within me an entirely different Beast! 

Lemon not so weird.... Blueberry, YUM! ...Lavender... wait, what? In the spirit of trying those odd flavor combinations I was exploring I picked up a mix on a trip to Whole Foods to try that was different yet totally within my comfort zone! Who doesn't love pancakes? They were different, but delicious, and I have not been able to get that combination out of my head ever since. But trips to Whole Foods are few and far between as there are not any close to me. And I've been feigning for those pancakes I had over a year ago ever since. 

But finding lavender seemed as elusive to me as Bigfoot! 

Last weekend, on a trip to visit my Grandpa in (kind of) the middle of nowhere, I was excited to take up the opportunity with my Aunt in visiting the local farmer's market. My jaw dropped when I came across a simple little stand...


And with that, I set out to try and recreate those delicious pancakes at home. This morning my house was filled with the aroma of sweet success! I don't have an actual recipe as I am kind of a "little of this and that" kind of cook... But essentially what I did was use a base recipe I found on Pinterest from momluck for basic home-made pancakes substituting one packet of powdered Stevia in place of the sugar to stay closer within IQS (I Quit Sugar). I then added ...a little of this and that :)  

Lemon Lavender Blueberry Pancakes

Ingredients|
  • 1½ Cups Flour
  • 3½ tsp. Baking POWDER
  • 1 tsp. Sea Salt
  • 1 pkg. Powdered Stevia
  • 1¼ Cups Coconut Milk (I actually didn't measure mine, I just mixed to my desired consistency)
  • 1 Egg
  • Zest & Juice of 1 Lemon
  • Pinch of Lavender
  • Handful of (fresh or frozen) Blueberries

Directions|

1. Sift together dry ingredients, flour, baking powder, sea salt, Stevia, lemon zest, and Lavender.

2. Mix in lemon juice, egg, and coconut milk.

3. Pour spoonfuls of batter into a heated pan coated with melted butter or coconut oil. Drop on a handful of blueberries on to each.

4. Cook until golden on each side.

5. Serve drizzled with honey. Garnish with additional lemon zest and blueberry if you wish.
